What is a Japanese Pancake

In Japan, sponge pancakes are known as "hoto kiki" which means "hot cake" or it can be called " fufu pan cake" which means fluffy pancake or sponge. 

 

The difference between (Hutu Kiki) and (Pancake):

  • Originally the two are of the same basic dough, but "pancake" is an umbrella name that includes all types of pancakes, and is usually used in the West and other countries to refer to pancakes with a thin round shape that does not use sugar.
  • As for "Hoto Kiki": It is a type of pancake, but it is a term used only in Japan, referred to the fluffy Japanese pancake with a sponge and soft texture, which is the consistency preferred by many Japanese, and it is a sweet meal that contains sugar, unlike Western pancakes.

 

History of pancakes in the world and Japan:

  • Although there is no record of the first pancakes made, the history of pancakes is said to date back to ancient Greece. At that time it is said that flour dough and water were baked on both sides with hot stones, forming a thin pancake pie.
  • Looking back at Japan's history, the first form of Japanese pancake existed since the sixteenth century, called Funo Yaki, invented by the founder of the Japanese tea ceremony, Sin no Rikyū.
  • The method of making it was by mixing flour with water and sake, then the mixture was fried in a flattened form and served with a sweet miso dough for tea ceremonies. This sweet snack was famous and loved but the tradition of making it disappeared at the end of the Edo period (1603–1868).
  • But because of the influence of Western countries, pancakes regained fame in twentieth-century Japan. It became the first beloved sweet dish, gradually increasing in popularity in restaurants and cafes and the Japanese excelled in the ways it was made and decorated.
  • In recent years, fluffy and soft Japanese pancakes have become the most common and sought-after in cafes and restaurants. Not only does it look cute but it tastes and textures soft and sweet, and social media in particular has contributed to the success of Japanese pancakes and people from all over the world in love with it.
  • Where restaurants and cafes in Japan compete to make the tastiest and nicest pancakes, so they excel in decorating them, using fruits, sweet syrup, caramel, cream, and other materials and methods, creating their decorations and flavor to attract customers to try and enjoy Japanese pancakes.

How to make Japanese pancakes:

Amounts of the modus operandi of sponge pancake on the Japanese way :

  • A cup and a half of flour
  • 4 tbsp sugar
  • 2 teaspoons baking powder 
  • 1/2 teaspoon salt
  • A cup and a quarter of milk
  • 4 tbsp unsalty butter
  • 1/2 teaspoon vanilla extract
  • 1 large egg yolk + 3 large egg whites 
  • One and a half tablespoons of oil

To serve: 

  • Sugar Syrup or honey for decoration 

How to make sponge pancakes in the Japanese way:

1- Beat the flour and half the amount of sugar, baking powder, and salt in a large bowl.

2- Then beat the milk, butter, vanilla, and egg yolks in a medium bowl.

3- In a large bowl, beat the egg whites and the rest of the sugar with an electric beater, at high speed for two minutes to become like a whipping cream in the consistency.

4- Narrow the milk mixture into the flour mixture and stir until the mixture is combined.

5- Add Part of the egg mixture of the previous mixture, stir, then narrow the rest of the eggs and beat again.

6- Spray a ring mold with nonstick cooking spray.

7- Heat a non-stick pan over medium heat and cover it with nonstick cooking spray, put the pancake mold in it, pour half a cup of the mixture inside it, and give the pan.

8- Cook it until the pancake rises inside the ring and the bottom becomes golden for about 5 minutes then carefully remove it from the pan and turn the ring on the other side, cover the pan, and cook the other side. And so, with the rest of the mixture.

9- Transfer the pancake to the serving plate and remove the mold.

10- Serve with syrup or honey and butter.


Alert!!!!

  • Japanese pancakes are fluffy and spongy due to the ingredients and the way they are made, this soft sponge texture can fall apart if left for hours. 
  • Therefore, it is preferable to serve it immediately after completion, and often sprinkle it with sugar powder, honey, or sweet syrup with some flavor, or you can use chocolate sauce, fruit, etc. as desired.
